It aimed to transform a simple, nostalgic comfort meal into a interactive, visual landscape. However, the vintage execution suffered from a common mechanical failure: the octopus tentacles were cut too short, causing them to curl awkwardly inward instead of opening up, and the boxed cheese sauce was too fluid, allowing the franks to sink to the bottom like a collapsed shipwreck. Today, we are completely re-engineering this highly popular dish to match our highest modern standards, ensuring the visual whimsy remains absolutely untouched while optimizing the food mechanics for a flawless, repeatable result.
This dish was made to lean heavily into it's playful structure. To make a standard hot dog open up its "tentacles" naturally, we take advantage of the structural expansion of the casing under heat. By splitting the lower two-thirds of a premium beef frank into precise longitudinal segments and subjecting it to a brief flash-boil, the internal proteins expand faster than the outer casing, forcing the legs to curl outward into an autonomous, self-standing octopus. To support these standing structures, we ditch wet, runny processed cheese (our past efforts) and replace it with a dense, velouté-based cheese sauce infused with medium Cheddar and American cheese for maximum emulsification. This creates a thick, creamy "coral reef" that firmly anchors the noodles and holds our octopus structures securely upright on the plate, rather than twisted noodles like the past dish.
