A Frittata That Thinks It's a Pizza

This isn't your average frittata. We're loading it up with all the usual suspects: a rich tomato sauce base, plenty of cheese (mozzarella, of course!), and your favorite pizza toppings. Whether you're a pepperoni purist, a veggie lover, or a supreme enthusiast, you can customize this frittata to your heart's content. It's a fantastic way to use up leftover pizza toppings or get creative with new combinations.

Yields: 6 servings Prep time: 15 minutes Cook time: 25 minutes

Ingredients:

  • 8 large eggs
  • 1/4 cup milk or cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese, divided
  • 1 cup pizza toppings of your choice (e.g., pepperoni, cooked sausage, mushrooms, bell peppers, olives, cooked bacon)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil leaves, for garnish (optional)

Equipment:

  • 9-inch oven-safe skillet (cast iron recommended)
  • Whisk
  • Measuring cups and spoons

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk or cream, salt, and pepper.
  3. Sauté the aromatics: Heat the olive oil in the oven-safe skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  4. Add the sauce and toppings: Spread the pizza sauce evenly over the bottom of the skillet. Sprinkle with 1 cup of the mozzarella cheese. Arrange your chosen pizza toppings over the cheese.
  5. Pour in the eggs: Pour the egg mixture evenly over the toppings. Sprinkle with the remaining 1 cup of mozzarella cheese and the Parmesan cheese (if using).
  6. Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the top is golden brown.
  7. Garnish and serve: Let the frittata cool slightly before slicing and serving. Garnish with fresh basil leaves, if desired.

Serving Suggestions:

  • Serve warm, straight from the skillet.
  • Cut into wedges for breakfast, brunch, lunch, or dinner.
  • Pair with a simple green salad or a side of garlic bread.
  • Leftovers can be reheated or enjoyed cold.

Variations:

  • Vegetarian: Load up with your favorite vegetables! Mushrooms, bell peppers, onions, olives, spinach, and artichoke hearts are all great choices.
  • Meat Lover's: Go all-in with pepperoni, sausage, bacon, and ham.
  • Supreme: Combine a variety of meats and vegetables for a classic supreme pizza flavor.
  • Spicy: Add a pinch of red pepper flakes to the egg mixture or use spicy sausage or pepperoni.
  • Different Cheeses: Experiment with other cheeses like provolone, cheddar, or fontina.
