Chicken Florentine Quesadilla

 

This recipe combines the creamy, comforting flavors of chicken Florentine with the ease and portability of a quesadilla. Spinach tortillas enclose a delicious filling of chicken, spinach, artichoke, and cheese, creating a satisfying and flavorful meal.

A Florentine Twist on a Classic

    Chicken Florentine - a dish typically featuring chicken cooked in a creamy spinach sauce. This quesadilla adaptation captures those key flavors, making it a fun and accessible way to enjoy a classic. The spinach tortillas complement the filling, adding an extra layer of flavor and visual appeal.   

Recipe: Chicken Florentine Quesadilla

Yields: 4 quesadillas Prep time: 20 minutes Cook time: 15 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded or diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen spinach, thawed and squeezed dry
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 spinach tortillas (about 8-10 inch size)
  • 2 cups shredded mozzarella cheese

Equipment:

  • Large skillet
  • Measuring cups and spoons
  • Griddle or large skillet

Instructions

  1. Prepare the Filling: Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant. Add the spinach and artichoke hearts and cook for 2-3 minutes, stirring occasionally.  
  2. Make the Cream Sauce: Stir in the heavy cream, Parmesan cheese, salt, and pepper. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened. Stir in the cooked chicken.
  3. Assemble the Quesadillas: Lay out 4 spinach tortillas. Sprinkle each tortilla with about 1/4 cup of mozzarella cheese. Spoon about 1/2 cup of the chicken and spinach mixture over the cheese. Top with another 1/4 cup of mozzarella cheese. Top with the remaining 4 tortillas.
  4. Cook the Quesadillas: Heat a griddle or large skillet over medium heat. Cook the quesadillas for 3-4 minutes per side, or until golden brown and the cheese is melted and bubbly. You may need to cook the quesadillas in batches.
  5. Serve: Cut each quesadilla into wedges and serve immediately.
