- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (15 ounce) container ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup
heavy cream - 1/4 cup milk
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh parsley
Instructions:
- Cook the pasta according to package directions.
- While the pasta is cooking, heat the olive oil in a large
skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. - Add the
spinach and cook for 2 minutes more. - Stir in the ricotta cheese, Parmesan cheese, heavy cream, milk, lemon juice, lemon zest, salt, pepper, and red pepper flakes.
- Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
- Add the cooked pasta to the skillet and toss to coat.
- Stir in the basil and parsley.
- Serve immediately.
