Meltaway Mornings: French Toast Brunch Pinwheels

 A magical mashup of brunch and sushi—crispy, creamy, sweet-savory perfection.



Ingredients (Makes ~16 bites):

  • 4 slices of soft sandwich bread (white, brioche, or potato bread work best)

  • 2 eggs

  • 2 tbsp milk or plant milk

  • Pinch of salt and black pepper

  • 1 tsp sugar (optional for contrast)

  • 1 tbsp butter or neutral oil for the pan

Filling Options (pick a combo):

  • 4 oz whipped cream cheese or garlic herb spread

  • Thin cucumber strips

  • Julienned apple or pear (for sweet crunch)

  • Thin sliced turkey or ham

  • Smoked salmon or roasted red pepper (for an elevated touch)

  • Baby spinach or arugula

  • Optional: drizzle of honey or maple syrup, sprinkle of crushed walnuts


Instructions:

  1. Trim & flatten the bread:
    Cut crusts off the bread. Use a rolling pin to flatten each slice.

  2. Make the egg wash:
    Whisk together eggs, milk, salt, pepper, and sugar.

  3. Dip & cook:
    Quickly dip each bread slice in the egg wash (don’t soak!) and sear on a buttered skillet until golden on both sides. Let cool slightly.

  4. Fill & roll:
    Spread cream cheese generously across one side. Add your filling combo toward one edge (like sushi). Roll tightly from that edge.

  5. Slice & serve:
    Slice each roll into 4 bite-sized rounds. Serve warm or room temp with an optional dip like honey mustard, fig jam, or balsamic glaze.
